It takes on the texture of rice with just a few pulses of a food processor. And with it’s low-carb/low-calorie properties, cauliflower rice is the perfect food to get full and satiated fast! The recipe below is a general recipe but you can easily add in your favorite flavor profiles like cumin, chili powder, and cilantro for a mexican rice or basil, rosemary, sundried tomatoes and olives for a mediterranean. The possibilities are limitless (and delish)! Cut florets from stem and add them to the food processor Pulse the cauliflower for 20-30 seconds Saute rice 5 minutes with your favorite spices/herbs! Cauliflower Rice Print Author: Healthy Julie Ingredients 1 head cauliflower, only florets ½ yellow onion, minced 2 garlic cloves, minced ½ cup vegetable broth, separated ¼ tsp sea salt ⅛ tsp fresh ground pepper 1 Tbl coconut oil 2 Tbl fresh parsley, minced Instructions In a food processor, add the cauliflower florets and pulse about 30 seconds until a rice-like texture has formed. Set aside. Heat a large sauté pan on high heat. Add onions in an even layer and allow to cook without stirring for 1 minute. When you begin to see the onions brown (caramelizing) on the bottom, add ¼ cup veggie broth and stir. Add garlic and cook for 2-3 minutes stirring frequently. Toss in processed cauliflower, sea salt and ground pepper and cook together for 4-5 minutes stirring occasionally. Add more veggie broth if needed to keep moist. Remove from heat and toss in coconut oil and parsley. Serve immediately. 3.2.2885
