Line a baking sheet with parchment paper. Add all ingredients into a large mixing bowl and toss until all pumpkin seeds are well coated. Pour seed mixture onto baking sheet and roast in the oven for 12-14 minutes until golden brown and aromatic. Allow to cool 5-10 minutes. Enjoy immediately or place in an airtight container for up to a week.
