Chocolate Avocado Pudding
  • ½ cup Healthy Julie Ganache (see above link for recipe)
  • 4 ripe avocados (or 2 large), peeled and seeded
  • ⅓ cup non-dairy milk (see above link for options)
  • ½ cup real maple syrup (Grade A medium)
  • ½ cup cacao powder (cocoa powder is also okay)
  • 1 tsp vanilla extract
  • ½ tsp ume plum vinegar (or ¼ tsp sea salt)
  • pinch of cayenne
  1. Add all ingredients to a food processor and blend until creamy. Place in the refrigerator for 1-2 hours for flavors to marinate. Serve when ready with your favorite fruits and/or coconut whipped cream! (see link above for whipped cream recipe)
