Summer Tomato Tart
 
 
Ingredients
  • Crust:
  • 1 cup pecans
  • 1 cup walnuts
  • ½ tsp garlic powder
  • ½ tsp fresh rosemary (minced)
  • pinch sea salt
  • Filling:
  • 1.5 cups cashews (soaked and rinsed)
  • 1-2 roma tomatoes
  • 10 sundried tomatoes
  • 2 Tbl fresh basil, roughly chopped
  • 1 Tbl fresh lemon juice
  • 1 Tbl balsamic vinegar
  • ½ tsp sea salt
  • Garnish:
  • 1 slice red tomato
  • 1 slice yellow tomato
  • 2 basil leaves, finely chopped
  • sprinkle of finishing salt (I used celtic sea salt in the photo above)
Instructions
  1. In a food processor, pulse all crust ingredients and press into a small tart pan. Set aside.
  2. In a blender, process all filling ingredients until well-combined.
  3. Pour filling into crust-lined tart pan and top with garnishing ingredients.
  4. Place in the refrigerator for 2-3 hours to set.
