Eggnog Snowball Bites

Serves: 10-12 balls
Ingredients
  • 2 cups coconut manna (aka coconut butter), warmed
  • ½ cup brown rice syrup
  • 2 tsp nutmeg, plus more for dusting
  • 2 tsp vanilla extract
  • 2 tsp rum (or rum extract)
  • ¼ tsp sea salt
  • ⅛ tsp cinnamon
  • ½ cup shredded coconut for rolling Eggnog Snowball Bites
Instructions
  1. In a mixing bowl add the coconut manna and brown rice syrup. Mix together until well-combined and no lumps remain. Add the nutmeg, vanilla, rum, sea salt, and cinnamon and mix well again.
  2. Place shredded coconut into a shallow bowl.
  3. Roll dough into 1-2" balls and roll into shredded coconut until well-coated.
  4. Place on a plate or baking pan and refrigerate for 30 minutes.
  5. Keep in the fridge until ready to package/serve.
