Coconut Bacon
  • 1 young coconut, meat scooped out and cut into strips
  • 3 Tbl tamari
  • 2 Tbl liquid smoke
  • 2 Tbl maple syrup
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • freshly ground black pepper
  1. Prepare the coconut strips and set aside.
  2. In a shallow bowl, combine the remaining ingredients to create the marinade. Slightly whisk until all ingredients are combined. Place coconut strips in the marinade and let them soak for 2-3 hours.
  3. Place the marinated strips on parchment paper (they get sticky when finished cooking) and either dehydrate at 150F for 4-5 hours or bake in oven at the lowest temperate (usually 200F depending on the oven you have) for 2-3 hours, turning halfway through.
