Cool Ranch Roasted Chickpeas

Serves: 3 cups
  • 4 cups cooked chickpeas
  • 1.5 Tbl nutritional yeast
  • 1 Tbl onion flakes
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp dried dill
  • 1 tsp sea salt
  • ½ tsp fresh ground black pepper
  • 2 Tbl olive oil
  1. Preheat oven to 250F an line a large baking sheet with parchment paper.
  2. Evenly spread your chickpeas on the baking sheet and place in oven for 20 minutes (this allows the chickpeas to dry before really cooking).
  3. After 20 minutes in the oven, increase heat to 400F and bake for 50-60 minutes. Times vary depending on oven so keep an eye on them when it's close to finish. They will be golden to dark brown and crunchy to the bite.
  4. While the chickpeas are cooking, add the remaining ingredients to a large mixing bowl and whisk together until full combined.
  5. When the chickpeas are ready, quickly transfer them into the large mixing bowl with spices and olive oil. Mix everything together for about 1 minute until each chickpea is coated with delicious flavor. Serve immediately or store in an airtight container for 1 week.
