Sunbutter Crispy Treats

Serves: 6-8 squares
  • For the Filling:
  • ½ cup puffed millet
  • ½ cup rolled oats
  • ¼ cup sunflower butter
  • 3 Tbl coconut oil
  • 2 Tbl maple syrup
  • 1 tsp vanilla extract
  • pinch sea salt
  • For the Chocolate Topping:
  • 2 Tbl coconut oil, melted
  • 2 Tbl maple syrup
  • 2 Tbl cocoa powder (or cacao)
  • pinch of sea salt
  • 1 Tbl bee pollen
  • finishing salt
  1. In a mixing bowl, add the millet, oats, sunflower butter, coconut oil, maple syrup, vanilla, and sea salt and mix until well-combined. Place in a parchment-lined container and spread evenly.
  2. In a small bowl, whisk together the melted coconut oil, maple syrup, cocoa powder, and sea salt until light and fluffy.
  3. Pour chocolate over the millet mixture and sprinkle with bee pollen and finishing salt (maldon or celtic are my favorites).
  4. Freeze for at least 30 minutes. Lift the sides of the parchment paper to release the solid mixture form the pan. cut into squares and either enjoy immediately or place in a freezer-safe bag and store in the fridge or freezer until ready to eat.
