Strawberry Pomodoro
  • ½ onion, chopped
  • 1 Tbl ghee
  • 2 tsp red pepper flakes
  • 2 garlic cloves, minced
  • 1 Tbl chopped fresh thyme
  • 2 Tbl olive oil
  • 1 12oz can crushed tomatoes
  • 2 tsp coconut sugar
  • ume plum vinegar
  • 8 large strawberries, green tops sliced off
  • ¼ cup water
  • 5-6 large leaves of basil, torn or chopped
  • sea salt used throughout to taste
  1. In a medium-high heat large skillet or saucepan, add the onion and ghee. Cook for 2-3 minutes until the onions begin to become translucent. Add the red pepper flakes, garlic, and fresh thyme. Cook 1 minute. Add the olive oil, crushed tomatoes, coconut sugar, ume plum vinegar and sea salt to taste. Stir all together and reduce heat to low. Simmer for at least 20 minutes.
  2. While the tomato sauce is cooking, add the strawberries and water to a blender and blend on high for 1-2 minutes until fully pulverized.
  3. When the tomato sauce is ready, pour in the blended strawberries.
  4. Garnish with torn basil and serve immediately.
