Chipotle Chickpeas

Serves: 2 cups
  • 2 heaping tsp of ground cumin
  • 2 tsp ground chili pepper seasoning
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp chipotle seasoning
  • 1 tsp sea salt
  • ½ tsp paprika
  • ¼ tsp liquid smoke (optional)
  • 2 Tbl coconut oil
  • 2 Tbl tahini
  • 1 29oz can cooked chickpeas
  1. In a heated skillet, add all spices (except liquid smoke) and toss for 1 minute (this is important as it allows the spices' aroma to release giving the dish a richer flavor). Add 1 Tbl coconut oil and liquid smoke. Cook for 25 seconds.
  2. Add chickpeas and coconut oil. Cook for 5-10 minutes stirring occasionally to break up the chickpeas. Add the tahini at the end and any extra spices you'd like for taste.
  3. Enjoy in a wrap, on top of cucumbers for a fun appetizer, or as is!
