Chocolate Covered Clementines

Serves: 40 segments
  • Healthy Julie's Chocolate Sauce (or your favorite bag of vegan chocolate chips)
  • ½ cup coconut oil
  • ¼ cup coconut butter
  • 2 Tbl cacao powder
  • 1 Tbl maple syrup
  • 1 tsp vanilla extract
  • pinch sea salt
  • 6-8 clementines, peeled and separated segments
  • ¼ cup each of favorite nuts/seeds (I love pistachios, sliced almonds, and hemp seeds)
  1. In a double-boiler (or a pyrex bowl placed on top of a saucepan) bring 1 cup water in lower pan to a boil to produce steam for the top pan/bowl. Place chocolate chips (or HJ Chocolate Sauce ingredients) in the heated bowl and stir until completely melted.
  2. While the chocolate is still melted, dip one clementine segment into the sauce and then gently roll into nut/seeds. Place on parchment paper lined baking sheet and repeat until all segments have been dipped.
  3. Place in refrigerator for 30 minutes or until chocolate is completely set. Take out of fridge when ready to eat!
