Quick Falafel
Serves: 6-8 falafel balls
  • 1 15oz package cooked garbanzo beans
  • 1 small handful Italian parsley
  • 1 small handful cilantro
  • 1 small handful watercress
  • 1 small shallot, chopped
  • 1 large garlic clove, chopped
  • ¼ cup whole wheat pastry flour (or your favorite all-purpose gluten free flour)
  • ¼ tsp baking soda
  • 1 Tbl sesame seeds
  • 1 Tbl fresh lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp fresh ground black pepper
  • ½ tsp sea salt
  • ½ tsp brown rice syrup or coconut sugar
  • dash of cayenne pepper
  • ghee/avocado oil for frying
  1. Add all ingredients to a food processor and pulse on high until all ingredients are well-incorporated.
  2. Place ghee/avocado oil (or your favorite high-heat fat) to a large saute pan and bring to a medium-high heat.
  3. Scoop 1-2 Tablespoons of the falafel mixture into a ball and place in the heated oil. Repeat until all falafel mixture is in the saute pan, making sure there is space between each ball. Cook for 4-5 minutes or until brown and crispy on the bottom. Flip over and repeat cooking time until the other side is brown a crispy. Remove from the pan and allow to cool 5 minutes before serving.
  4. Serve on a salad or in a sandwich/wrap with roasted red pepper, diced cucumber, fresh parsley, a drizzle of tahini and a spritz of fresh lemon juice.
