Vegan Pistachio Ice Cream

Serves: 2 cups
  • 1 can coconut milk (full fat!)
  • ½ cup pistachio butter (1 cup pistachios processed in food processor for 10 minutes),
  • ¼ cup maple syrup (I use grade A but you can also use grade B for a more robust maple flavor)
  • 1 vanilla bean, beans scraped (or 1 tsp vanilla extract)
  • pinch salt
  • ¼ cup pistachios, chopped
  1. In a high speed blender, add all ingredients (except chopped pistachios) and process for about 1 minute until creamy and well-combined.
  2. Add liquid mixture to an ice cream maker and follow ice cream maker directions (typically ready in 20 minutes)
  3. When the ice cream is almost finished churning, add the chopped pistachios and mix for about 15 seconds.
  4. Serve immediately as a soft serve
