Chocolate Honey Banana Bites

Serves: 40 pieces
  • 4 bananas, sliced into 1-inch medallions
  • ½ cup almond butter
  • 2 Tbl raw honey
  • 1 cup unsweetened dark chocolate chunks
  • ¼ cup cashews
  • 1 Tbl hemp seeds
  • 1 Tbl maple syrup
  • 1 tsp vanilla
  • ½ cup water
  • pinch of sea salt
  • optional: coarse grain salt (like celtic or maldon) for sprinkling garnish
  1. Place banana medallions flat on a parchment paper-lined baking sheet. Place about ¼ tsp almond butter on top of each banana slice. Place about ¼ tsp of raw honey on top of almond butter of each banana slice.
  2. In a double-boiler (or glass bowl on top of stove pot) begin to melt the chocolate.
  3. While chocolate is melting, add cashews, hemp seeds, maple syrup, vanilla, water, and sea salt to a high-speed blender and process for 1 minute until completely liquidized. Slowly pour the cashew/hemp milk into the chocolate sauce and whisk until thoroughly combined. Set aside.
  4. Place each banana/almond butter/honey slice into the chocolate sauce, coating completely. Return to baking sheet and repeat until all banana slices are coated in chocolate.
  5. Drizzle remaining chocolate and sprinkle with sea salt over bananas. Place in freezer for 2 hours. Remove from freezer when ready to eat.
