Coconut-Cherry Chia Pudding

Serves: 4-6 servings
  • 1 can full-fat coconut milk (365)
  • 1 8oz bottle pure cherry juice (CheriBundi)
  • ½ can water
  • 1 Tbl raw honey (optional)
  • ⅓ cup chia seeds
  • favorite fruit/superfoods to top
  1. In a blender, add the coconut milk, cherry juice, water, and (optional) honey. Blend about 1 minute until full combined and smooth. Pour mixture into a large bowl and add the chia seeds, stirring until well-combined. Place in the refrigerator for 6-8 hours (or overnight). When ready to eat, pour about 1 cup into a bowl and top with your favorite fruit/herbs/nuts/seeds/superfoods!
