To celebrate Mother Earth I stopped by Colorado’s Everyday Show and cooked up some delicious meals that are all about Reducing, Re-using, and Recycling. Check it out below and see more tips and recipe links below the video for more info! Reduce Reduce the amount of energy you use by making raw food! This will typically use less water and less energy/gas from the oven and stove. When we think of raw food we typically think of vegetables but there are so many delicious and nutritious raw dessert recipes out there and this is one of them! Mini Wild Blueberry Cheesecakes. Reuse Did you know you can re-grow vegetables from your scraps? Here are a few of my favorite ways to reuse my scraps. Basil: place a 4 inch stem in a glass of water with sunlight and after a few days can be replanted in the soil. Same can be done with cilantro and parsley. Celery: Put the base in warm water and sunlight. Once the leaves begin to grow you can move it to soil. Same can be done with fennel. Ginger: Simply plant a knob in the soil and it will begin to grow in a few days. Same can be done with garlic cloves. Recycle Recycling is about taking old items and turning them into new! So, take your leftovers and instead of eating the same dish, reuse the food to make a whole new one. A great example is taking my Mediterranean Chicken dinner and simply adding it to a pizza crust. You get a whole new dish with very little effort!
